Noted pastry chef to teach

Advanced Baking class at Nicolet

 

The former head pastry chef for the Hyatt Regency in Saipan, Pacific Islands, will teach an Advanced Baking class at Nicolet College next semester.

Thomas LaPierre has 15 years experience as a professional chef and is trained in Classical French, Italian, Regional American, Caribbean and Asian cuisine. His post-graduate work focused upon advanced pastry techniques.

During the class he'll focus on rolled-in dough, specialty breads, European-style desserts, petit fours, and decorative work.

The three-credit class will meet Fridays, 8 a.m. to 1 p.m., Jan. 23 through May 22 on the Rhinelander campus. Tuition is $390.60.
